I began a quest a couple years ago to find an egg casserole recipe that tasted great, but didn’t use bread or biscuits as most recipes do! Finally, I found a fabulous recipe on Five Heart Home’s blog. The ground beef “sausage” is absolutely delicious and adds an amazing depth of flavor. This casserole will make a perfect addition to your Easter brunch.
If you are more of a traditionalist and would like to use ground pork (with the seasoning mix below) or pre-seasoned pork sausage instead of the ground beef, the recipe is still foolproof.
Ground Beef, Egg & Cheese Casserole
· 1 pound grass-finished ground beef
· 1 Tbs raw honey
· 2 tsp dried sage
· 1 ½ tsp dried basil
· 1 ¼ tsp salt (divided)
· ½ tsp garlic powder
· ½ tsp onion powder
· Pinch crushed red pepper flakes or 1/8 tsp chipotle pepper
· Freshly ground black pepper (to taste)
· 6 ounces grated cheddar cheese
· 8 pasture-raised eggs
· 1 ½ cups milk
· 1 tsp mustard powder
Brown the ground beef and then mix in the honey, sage, basil, 1 tsp salt, garlic powder, onion powder, red pepper flakes, and black pepper. Spread the ground beef mixture on the bottom of lightly greased 9x13 baking dish and sprinkle with grated cheese.
In a large bowl, whisk together the eggs, milk, mustard powder, ½ tsp salt, and ground pepper until well combined. Evenly pour the egg mixture over the beef/cheese in the baking dish.
Bake at 350 for 50 to 55 minutes until the eggs are puffed and golden brown and the center is set. Allow to sit for 5 minutes before slicing and serving.
This casserole can be used at times other than Easter Brunch. Why not assemble it the night before and popped into the oven while you are getting ready for the day? IF you have any leftovers, they reheat beautifully. In the mornings before work or school, you can simply reheat individual portions. By adding fruit or a smoothie, you can have a healthy breakfast in minutes!
