Some people love sausage gravy and others despise it! I wonder why that is? Could it be that they’ve never had GOOD sausage gravy?
Since I love sausage gravy, I once tried ordering it in a restaurant. I was served a disgusting sausage flavored white sauce. They try to spice it up, but it was tasteless. If this is what people think sausage gravy should taste like, no wonder they don’t like it!
If you are a sausage gravy lover, tolerate it, or grossed out by the thought of it, here is a recipe I would encourage you to try. There are a few secrets to this recipe though:
Only use the finest quality sausage available. I might be biased, but our organic seasoned pork sausage makes the best gravy.
Use high-quality full fat milk.
Use an unprocessed flour. We love Janie’s Mill Organic flours. For this recipe, we use their All-Purpose flour.
Whole Hog Sausage Gravy
Ingredients:
1 pound sausage
1/2 cup butter (optional)
1/2 tsp pepper
1/2 tsp salt
1 tsp sage
1 cup Janie’s Mill All-Purpose flour
6 cups milk
Directions:
Brown sausage in a large skillet over medium heat. Do not drain. If using butter, add now and allow to melt.
Add spices to the skillet.
Pour milk into a mixing bowl and whisk in flour until smooth.
Slowly add milk mixture to skillet.
Stir continuously over medium heat until the gravy is smooth and thick.
Serve over hot biscuits.
* The addition of butter will make an extra rich, flavorful gravy.
